It was spring break season in Belize. The shining sun reflected off of the clear blue sea as I dried myself off. My skin was toasted and my cheeks were sun-kissed. The water was fresh and filled with beautiful creatures. After my long morning of swimming and tanning, - my stomach was loud and hungry. I began to follow the smell of a magical aroma. Just down from the beach I spotted a unique looking restaurant called Rico's. The line was crazy! It wrapped all the way around the building. I was too astonished by the wonderful smell to eat anything else. I hopped into line and began day dreaming about my lunch. It was finally my turn to order. I got: ground beef (flavored with Belize spices), Rico's homemade salsa, fresh lettuce and tomatoes. topped with my favorite- guacamole. I brought the tacos back to the beach to share with my friends. By the time we sat down to eat my mouth was watering! The flavor of the meat was perfectly matched with the creamy guacamole. the lettuce was crisp and balanced out the spicy salsa. the tomatoes were diced and fresh. We gobbled them up so quickly. I have never had a better taco. My overall experience of eating at Rico's was off the charts. After eating lunch, we went back for dinner as well. although the salsa definitely gives it a spicy kick- it is totally worth it. I am interested in trying other dishes from this restaurant as well.
